Almond Butter Fail

The main event today was my attempt to make almond butter. All I can say is epic fail.

I thought, how difficult can it be? If you process the almonds long enough, they are sure to turn to almond butter, right?

Wrong.

I started out with soaked almonds, the healthiest choice. I processed them for a good 10-15 minutes, in my ear-splittingly loud 20 year old food processor. I can’t believe the old machine survived the abuse!

Eventually the almonds turned to a ball. No butter. I even added some melted coconut oil. Still no butter. The result was what I’d call an almond “spread”. The coconut oil added a nice flavor, and a few stevia drops helped bring out the coconut flavor even more. It’s really not bad. I’m naming it “Almond Butter Fail.”

It paired nicely with my Impromptu Crackers from day 11.

Breakfast

Snack

I was starving today! I just couldn’t seem to get filled up. The next snack was not one, but two plates of pistachio pesto-filled celery & broccoli sprouts.

Lunch
I haven’t been able to get enough of this dandelion and tahini dressing salad, so another repeat of that one.

Dandelion greens, red pepper, green onions, a little spinach.

Afternoon Snack
I started the attempt on the almond butter late afternoon. With all the tastes-as-I-went, and my trial of the resulting almond butter on about 6 crackers, I was STUFFED. This is the fullest I’ve felt since the trial started. I even felt a little sluggish.

This called for a light dinner

Dinner

The bowl looks so much smaller than it really was. This was a large bowl of blanched broccoli sprinkled with garlic powder, sea salt, and a drizzle of olive oil. Delicious!

Successes

Any day that I’m trying new things is a success, even if it doesn’t work out. Psychologically, it makes me feel anticipatory of trying something new, rather than stagnating in the same diet day after day.

I also completed another batch of my favorite onion flax crackers.

Cravings

Cravings were minimal today! It is a relief to finally be feeling like my old self more and more. It is difficult on the body and mind to begin a radically different diet, even if it is healthy.

I remind myself every day, this is a disease prevention diet . I don’t want to lose sight of my purpose.
