Have I Lost My Mind?

Today has been one of those days when I ask myself, what was I thinking? Have I lost my mind? How am I going to keep this up for another 2 1/2 months?

Cravings

Tonight was difficult. After cooking my family a former favorite meal of mine, I felt weak and discouraged. The cravings started pouring in – and it wasn’t for the meal I just prepared. Strangely I’m craving raw and cooked desserts!

It is a nagging, sometimes intense yearning
for things containing flour (or similar in texture).
It reminds me of an addiction.

I’m hoping that after this trial I will have reduced my dependence on sweets, and will do away with cravings. I’m surprised the cravings are this strong, however, because I wasn’t eating that many raw desserts, or rich raw recipes before this trial. I did eat high sugar fruits regularly. Even though fruit is extremely healthy, a diet abundant in high glycemic fruit is not for everyone.

Why am I doing this?

When things get tough, I remind myself that multiple types of cancer run in my family, my dad died of pancreatic cancer, and I’ve already cured my chronic allergies with raw food. I think about how great it is to feel energetic, wake up refreshed, and not feel sluggish after everything I eat.

Finally, I think about the possibilities of life-long disease prevention, changing bad habits, curbing my food addiction, and learning more than I ever thought possible.

Phase I of this diet (Rainbow Green Live-Food Cuisine) is about reversing my body’s tendency toward disease after a life long unhealthy diet. The diet will not be this strict forever. The final phase is much more lenient, so I am looking forward to some raw desserts in the future!

The Food

Early morning:
Spirulina tabs and mint lemongrass tea

Breakfast
My final three onion flax crackers with tahini
One whole avocado with sea salt

Lunch
An interesting salad I conjured up:
dandelion greens
red pepper
cauliflower

This combo calls for a curry dressing.

Tossed with dressing and pumpkin seeds on top

I transformed my leftover tahini dressing from the past two days into a curry dressing. Yesterday I had added mashed avocado to the leftovers. Today I added curry powder, salt, olive oil, and lemon juice. Tasty!

Snack

Hungrier than usual today, so…

Snack #2
About 5 teaspoon-size spoonfuls of almond butter w/ sea salt

Dinner
I began feeling a bit depressed as dinner approached. I wasn’t sure what to prepare, and my cravings were getting the best of me.

I needed a salad dressing, so chose a recipe out of Rainbow Green Live-Food Cuisine,

“Basic Italian Dressing:”

2 stalks celery chopped

1 clove garlic
1/2 cup olive oil
2 Tbsp lemon juice
1/2 Tbsp Italian seasoning
1/2 tsp Celtic salt

In blender, process all ingredients until smooth and creamy.

The greens consisted of romaine, and kale. I tore apart 3 large leaves of kale, massaged salt into them for about three minutes, then let them sit another 5 or so. The other ingredients were tomatoes and sliced green onions. This salad would also be delicious with avocado, onion, walnuts, black olives – there are so many choices, but I decided to keep it simple.

This salad was really, REALLY good. I was amazed at how closely this dressing recipe matched real Italian dressing. It was without a doubt the most satisfying salad I’ve had yet, and left me wanting more.

I’m encouraged by all the experimentation that is unfolding as I go. It is an unexpected bonus! I will be compiling the best of the best ideas for meal plans when this is all done.

Evening

No matter what, perserverance is always worth it in the end.
